1. lemon & rosemary crusted fish fillets
Oh my goodness!
Use your leftover bread to create a delicious crusty topping for white fish fillets.
What to do:
Grill fish on one side.
Place 1tsp dried rosemary, 2 slices bread torn in pieces, zest of 2 lemons and some seasoning in a food processor, then whizz to make fine crumbs
Turn over fish, sprinkle crumbs on fillets, drizzle with oil, and grill that side till cooked.
Serve with lemon, wedges, new potatoes, or thick-cut fries.
2. french toast
Ooh la la!
Use your leftover slices of bread to create a sweet or savoury fried bread delight.
What to do:
Break 2 eggs for a couple or 4 eggs for a family into a flat dish.
Add half a cup of milk and beat.
Quickly dip each side of a bread slice into the eggy mix and fry in a hot oiled pan.
Sprinkle with cinnamon sugar, syrup, lemon juice, or go savoury with grated cheese.
3. toasted sandwiches

So your bread is beyond making a fresh sandwich but you don’t want to chuck it away…
How about turning it into a quick, easy lunch of cheese toasties?
What to do:
Butter one side of each slice of bread.
Slice or grate some cheese.
Put the cheese on the unbuttered side. Add tomato slices if you like. Place another buttered slice of bread on top with the buttered side out.
Fry in a pan until golden brown on both sides. Make more than one – you always feel like more!
4. hot cross bun & lemon pudding

Sick of toasting your stale hot cross buns? Turn them into this lip-smacking pudding instead.
What to do:
Heat oven to 160 degrees. Grease a 2L oven dish.
Cut 4 hot cross buns in half and butter.
Arrange in greased dish crosses up. Sprinkle with a cup of blueberries.
Whisk 6 eggs, 1 cup milk, 1/2 cup thickened cream, 1/2 cup caster sugar, 2 tbsp lemon juice, and 2 tsp finely lemon rind.
Strain this through a sieve then pour mixture over the buns and leave to soak for 15 minutes.
Place dish in a roasting pan. Fill the pan with boiling water halfway up the side of the dish.
Bake for 30 or so minutes. Serve warm.
5. crispy chicken nuggets
Scrumptious!
What to do:
Heat oven to 220 degrees C.
In a bowl combine 1 cup breadcrumbs, 1/2 tsp garlic, 1/2 tsp smoked paprika, 1/4 tsp salt, a few grinds of pepper.
Drizzle 2 tbsp oil over the breadcrumb mixture then stir till coated in oil. In another bowl, stir 1/3 cup Greek yogurt, 1/8 tsp salt, and 3 tbsp water.
Cut chicken breast into one-inch pieces.
Dip into yogurt mix then roll in breadcrumb mix until fully coated.
Place on a baking sheet and bake for about 25 minutes.
Serve with dips, veg, salad, or wedges.
Other super quick options
Needs a baguette, cheese, onion, mayonnaise, sour cream, garlic & butter.
Needs 4 slices bread, 2 tbsp butter, tsp chopped garlic, 1 chopped chilli, 1/2 cup cheese, and 1/2 tsp chilli flakes
Toast 2 slices bread, spread with Marmite, sprinkle with cheese, top with tomato, salt, pepper, and herbs to taste. Grill 5 minutes & eat.
